1.面粉中加少量的盐,边加水边搅拌成面絮,将面絮揉成稍硬的面团,加盖静置30分钟

2.将面团搓长

3.揪成等量的面剂

8.轻轻扯长(25厘米左右)

9.双手拉起面片慢慢扯长,期间将面片不断上下扯长,当面挨到案板的时候会发出biang、biang的声音

14.扯面入开水锅,锅加青菜煮熟

小窍门&温馨提示
面团一定要用力揉匀,否则面扯不开
面要活的稍硬些,饧面的时间,夏天短,冬天长
炒西红柿鸡蛋卤时可放些胡椒粉、味精提味
