1.中国好邻居送了一盘已泡去苦水的苦笋。如是新鲜苦笋就要先去壳,然后放高压锅煮饭档压熟,再用手撕成长条(但邻居已切片处理了),放在大盆的清水中浸泡,其间要多次更换清水,直至苦味变淡。

2.咸菜剁碎,姜切丝,小米辣切圈。

3.锅中下小半碗油,下姜丝炒香。后头我又再加了猪油,没拍照了,炒笋,油一定要多才好吃。

4.下咸菜翻炒出香味。

5.倒入攥干水份的苦笋和小米辣圈,翻炒均匀。

6.下一匙白糖。

7.下一匙东古酱油和少许食盐,翻炒至入味。

8.起锅前加1匙猪油增香增亮度。

炒笋一定要猪油,而且油一定要多,炒起来才不会涩才好吃哦!
