1.准备好蔓越莓,清洗干净,拽干水分,加朗姆酒泡开待用。

3.先低速混合均匀,再高速搅打面团到扩展阶段。

5.揉出面团能拉出薄而有弹性的薄膜(即手套膜),整个揉面过程控制在20分钟以内,面团温度控制在26度左右。

6.取出面团,快速摔打几下,滚圆,收入大碗中,盖上保鲜膜,室温静置发酵45分钟左右。

7.时间结束后,面团发酵至两倍大。

20.切开朝上,依次摆入吐司模具中。

21.放入不开的烤箱中,同时放入一碗开水(100度)帮助发酵,温度保持在36度左右,湿度保持在85%,发酵时间约为40分钟,面团发酵至模具的9分慢。

22.发酵好的面团(入烤箱时喷水)放入预热好的烤箱中,中层,160度,烤25分钟(时间和温度根据自家烤箱脾气可以适当调整)。
