1.带鱼剪掉头、尾、鳍,去除内脏和黑膜,洗净剪成段。

2.放入姜丝、花椒、盐、胡椒粉、料酒,搅拌均匀,腌制30分钟,腌制过程中翻拌两次。

3.将带鱼粘上薄薄一层淀粉或面粉。

4.锅内倒入食用油烧至六成热,放入带鱼用中火炸。

5.炸至两面金黄,捞出控油。

6.葱、姜、蒜切片和辣椒、冰糖备用。

7.豆腐切成带鱼大小的形状,煎至两面金黄。

8.锅内倒入少许食用油烧热,放入葱、姜、蒜、辣椒炒香。

9.放入带鱼和豆腐,倒入热水,放入生抽、老抽、盐、冰糖、料酒,大火烧开转小火炖至汤汁浓稠。
