1.头天晚上提前准备:将沸水冲入面粉中,快速搅匀,温度稍低后用手揉成面团,待凉后装入保鲜袋,放冰箱冷藏室一晚;将鸡蛋打散,小葱切碎放入,混合均匀备用;

2.将面团揉成长条,分割成约6个28克左右的小剂子;

3.分别擀成薄薄的圆形面片;

4.平底锅烧热,将面片放入,中火烙约5秒钟,底部刚变色时翻面;

5.翻面后转小火,在饼皮上倒上蛋液,用木铲轻轻摊平;

9.红米放入搅拌机打成细粉,多打几次,过筛备用;

10.将红米粉加入100克水搅匀成生浆;

11.锅内倒入650克水煮开,倒入生浆,加入冰糖,再煮沸后转小火,不断搅动,煮5分钟左右;

12.待黑迷糊开始变稠时,淋入打散的蛋液,稍搅动,关火;

小窍门&温馨提示
1、红米打成粉再煮粥,可大幅缩短煮制的时间,最后淋入蛋液可增加口感,也可不加;
2、烫面团尽量擀得薄些,口感好;
3、烙饼时间很短,全部烙好后再卷,用拧干的湿毛巾盖住,防烙好的面饼变干;
