1.黄油提前隔水融化成液体

2.蛋黄加20g细砂糖,搅打至黏稠且颜色呈乳白色,体积膨胀。

3.蛋清一次性加入70g细砂糖,打到蛋白捞起缓缓从打蛋器上落下,落在盆中形成的纹理不变,而未凝固在打蛋器上即可

4.蛋黄加入蛋白中,用刮刀上下翻拌均匀

5.过筛入粉类,继续用刮刀翻拌均匀

6.将融化的黄油到在刮刀上,快速的用刮刀翻拌,均匀即可

7.拌好的面糊倒入铺有烘焙油纸的烤盘中

8.利用刮板将蛋糕糊刮平,放入预热好200度的烤箱,中层烤12分钟

9.出炉后将蛋糕连着烘焙油纸一起放在晾网上彻底放凉,然后再撕去烘焙油纸

10.制作馅料。将40g红豆沙用50g奶油调整稀稠度,效果如图

11.200g淡奶油倒入盆中,用打蛋器搅打至出现纹理

12.放入红豆沙,继续搅打成馅料

13.蛋糕片下垫一张锡纸,采用内卷法,将奶油馅料涂在蛋糕片上,起始端奶油稍厚,末端奶油稍薄,最后3cm左右不涂奶油

14.将40g小蜜豆依次排列到奶油馅上
