1.奶油奶酪2块。

2.奶油奶酪(cream cheese)加糖40克隔热水搅拌至顺滑。

3.放入蛋黄。

4.搅拌均匀。

5.筛入面粉(我用了普通西粉)。

6.搅拌均匀无颗粒。

7.蛋白加糖用电动搅拌器搅拌至偏干性发泡。(提起打蛋头,蛋白呈小尖弯勾。)

8.把1/3的蛋白放入蛋黄糊里翻拌匀。

9.倒回2/3的蛋白里。

10.快速翻切拌均匀,面糊呈浓稠软盈的状态。

11.分装入8寸的圆型蛋糕模和8寸的心形蛋糕模里,蛋糕模外面包上两层锡箔纸,防止进水。

12.放入预热好的烤箱,华氏340度/摄氏170度水浴法烤10分钟。(烤箱预热的时候,把装了水的大烤盘放进一起预热。)

13.10分钟后转华氏300度/摄氏150度继续烤60分钟,出炉,放凉,不要倒扣。

16.100ml淡奶油加1大匙糖打发至不流动状态,装入裱花袋。
