1.将武昌鱼清理干净,再冲洗干净沥干水分后,切下鱼头和鱼尾

2.再在鱼背部切成1厘米厚的片,鱼肚部不切断

3.切好后是这样的,摊开像孔雀开屏一样

4.放入碗内

5.姜洗净切丝、蒜去皮洗净切片、小米椒洗净切圈,葱洗净分别切段和葱花

6.放一半的姜丝、葱段在鱼里,加入盐、料酒、胡椒粉拌匀腌制入味

7.将腌制好的鱼洗净后沥干水分,摆入盘中(摆成孔雀开屏的样子)

8.再撒上姜丝、葱段

9.把蒜片放在鱼身上的尾尖部,再放入小米椒

10.将摆好孔雀开屏鱼的盘子放入开水锅中蒸10分钟

11.蒸鱼的时候备一小碗,放入蒸鱼豉油、生抽、鸡精粉拌匀

12.倒入锅中蒸好的鱼上,盖上锅盖焖2分钟

13.2分钟后,端出锅,夹出姜丝和葱段丢弃

一个孔雀开屏鱼用武昌鱼做出来会更好看,别的鱼也可以做,只是效果没这么好。
