1.准备竹笋和猪肉末

2.把竹笋去壳,去老根后中间剖开切成长短不一的段后再用小刀把中间的节去掉,留笋尖头

3.冷水下锅焯水后捞起

4.准备葱花和水淀粉

5.猪肉末里加入蛋清,2克盐,黄酒按顺时针方向搅拌至油粘性后再加入一半的葱花搅拌均匀

6.把猪肉末加入竹笋里后放入盆中

7.冷水上锅盖上大火蒸15分钟后熄火

8.先把蒸好的醸竹笋放入盆中
