1.冬瓜去皮,去籽切成小块,锅里烧开水放入冬瓜,煮15分左右

2.煮好的冬瓜冷却后,放在砧板上切成冬瓜蓉

3.然后用布将冬瓜蓉包起来尽可能的挤掉水分

4.菠萝去皮,尽量切成小丁剁碎,用纱布包好,挤出菠萝汁,挤完汁后的菠萝泥放砧板剁成蓉

5.把菠萝汁,细砂糖,麦芽糖放锅里,大火煮开后转小火,不断搅拌直到糖完全溶解

6.将冬瓜蓉和菠萝包蓉倒入锅里,用小火慢慢翻炒,炒到水分变少,馅就慢慢成型

7.炒好凤梨馅盛出来放在碗里,冷却后使用

8.黄油软化,加入糖粉用电动打蛋器打发

9.加入鸡蛋,继续打发至鸡蛋与黄油完全融合,再加入过筛的低筋面粉,奶粉

10.用刮刀拌匀,使粉类和黄油完全混合,拌成酥皮面团

11.根据制作凤梨酥的大小,将面团和馅料按1:1比例称重,取一块面团揉成圆形,用手压扁,放上一块凤梨馅

12.将面皮包住馅捏紧,包好的面团放致模具里把它压平,使面团在模具里定型

13.做好的凤梨酥放入烤盘

14.放入预热好的烤箱,上火160度,下火140度烤15分钟左右即可
