1.将紫薯洗净放入蒸锅中蒸20分钟,用筷子可轻松戳进时即可;

2.将紫薯晾凉后,放进绞肉杯中,搅拌30秒(搅拌时间太长会破坏紫薯沙的细胞壁);

3.将黄油放入锅中加热,融化后加入紫薯沙、白糖,炒至颜色变深,粘稠即可;

4.将炒好的沙晾凉后分割成25g每只,滚成团待用;

5.将咸蛋黄取出洗净,放空气中自然风干5分钟,放入烤箱中,上下180℃烤5分钟;

6.蛋黄晾凉,将紫薯沙压扁包裹住蛋黄,收口,放在旁边待用;

7.将面粉过筛加入到,隔水融化的黄油里;

8.“油皮”及“油酥”和成面团,松弛15分钟;

9.将“油酥”分割成15g每只的面团;

10.将“油皮”分割成20g每只的面团;

11.油皮压平,包裹住油酥,收口朝上;

12.把包好的面团收口朝上擀成牛舌状;

13.由上至下卷起,松弛10分钟左右;

14.将面卷收口朝上擀平,从上至下卷起,松弛10分钟左右;

15.将醒好的面皮收口朝上,擀成大一些的包皮;

16.将沙团包紧、收口、捏紧底部;

17.码放在烤盘上,刷上蛋液;

18.撒上芝麻,烤箱预热2分钟,上下180℃烤20分钟。

小窍门&温馨提示
每个烤箱温度都不一样,初学者请先用1~2个烤着试试,有的上面还没烤好下面底已经糊了,遇到此类情况请调低烤箱下温度。
