1.准备食材:猪手、冰糖、柱候酱、黄老酒、南乳。(猪手洗净、斩件、刮干净猪手上的细毛)

2.烧开一锅水,放下姜片和陈皮、加上一汤匙盐。

3.调复合酱汁:老抽一汤匙、酱油2汤匙、蚝油1汤匙混合。(下称复合酱汁)

4.水开后倒入猪手焯煮10分钟。

5.捞起用冰水浸泡片刻,没有冰水用冷水代替。

6.捞起沥干。

7.热锅,放适量油,下南乳煎炒香。

8.倒下猪手翻炒片刻。

9.倒下柱候酱、冰糖。

10.加入复合酱汁,保持大火翻炒6分钟左右。

11.倒入黄老酒。

12.加上足量的清水煮开,遮上锅盖调成中火焖80分钟。(5饭碗左右的水量)

13.焖至汤汁剩下少许,调入鸡粉、即可关火铲起~

14.脆皮、筋道~爽而不腻~
小窍门&温馨提示
用凉水过冷河保持猪手的爽脆,焖干汤汁剩下一点即可铲起。没有黄老酒可以用普通米酒代替,或是绍兴酒也行。
