1.新鲜黄鳝剖开成大片,用白醋泡一下,刷掉外皮上的粘液

2.洗净的鳝片用开水烫一下,紧出血水,顺便把表皮上参与的粘液去除干净

3.洗净的黄鳝应该是这个样子的,外表皮完全没有粘液,否则会很难吃

4.将黄鳝中间的脊骨剔除,摸到硬硬的脊骨后,用菜刀按V字去切,很容易就除掉整根脊骨

5.海白虾洗净,剥壳去皮,但虾头一定要整整留下,并剪掉前面的长须和尖嘴处

6.黄鳝切段,虾仁挑去纱线

8.油锅微热,放入姜片爆香,再投入虾头,小火炸制

9.虾头变得香脆后捞出,此时锅里的油应该是橙红色

13.国内加入清水,大火烧开后盖盖子,转小火炖煮十分钟到十五分钟

14.炖好的汤汁乳白色很漂亮,此时加点盐调好味道

16.面条先用开水煮至半熟
