1.鲅鱼洗净切块备用;

2.辣白菜切成大块备用;

3.香菜小葱切末;

4.洋葱切丝、辣椒切丁;

5.锅中烧油,油热后将洋葱入锅炒制,炒香后加入辣白菜和辣椒炒3-4分钟;

6.再加入辣椒酱继续炒制;

7.冲入清水,加入糖、酱油、料酒、蚝油;

8.再加入鲅鱼炖制,水开后转中小火炖制;

9.炖15分钟后汤汁浓稠时转大火收汁;

10.出锅前淋入香油,撒入香菜葱末即可。
小窍门&温馨提示
1、此菜制作简单,且无须过多的调料,烹出的鱼一样非常鲜美。由于泡菜有一定咸度,所以要控制好盐量;
2、此菜用鲅鱼,肉质肥美,其它鱼均可;
3、要多炖一会儿,让泡菜的味道,慢慢融合在汤中和鱼肉中,味道才有滋味。
