1.黑鱼洗净切块

2.豆腐也用清水冲洗一下,中间划一切

3.锅内油烧至冒烟,放入生姜爆香

4.下入黑鱼片,煎至鱼身发白,加少许醋,爆出醋香

5.加入适量清水盖上锅盖煮开

6.煮开后再加入豆腐片

7.盖上锅盖,再次煮开至汤色发白

8.起锅时加适量盐调味
小窍门&温馨提示
1、煎鱼的油要烧到温度非常高,冒烟了才不会粘锅,煎的时候翻动不要太频繁,等一面煎好后再翻面
2、豆腐放在手上切的,我一只手拿豆腐,一只手拿刀,就没拍过程了,这样一边切一边下锅,能够保证豆腐的完整性。
