1.将西兰花去茎,掰成小朵,入沸水烫焯熟,用食用油和盐拌匀,放入盘中摆成圆圈状;

2.将红尖椒切成节,葱切葱节,姜切丝,蒜拍成泥,剁椒用小碗盛装;

3.将鱿鱼洗净去骨去黑色的膜,切花刀,交叉切,不要划断即可;

12.将鱼皮朝下,倾斜划一刀打片,直至鱼皮处,注意不要划穿了,同样手法划5片,切断为一组成菊花鱼形状,这个更要多练习呀;

13.再竖切为条,先用蛋清和盐拌匀,再沾干淀粉,一定不要怕浪费淀粉,沾满鱼肉;

14.炒锅内油烧至8成热,下鱼炸熟,围在西兰花外围;

15.炒锅油烧热,下剁椒炒香,加少许清水烧开后用滤网去渣;

16.用盐、白糖、香醋、湿淀粉调味勾芡收汁,浇在鱼肉上即可;
