1.切小排

2.水煮沸,排骨焯水

4.先把姜切成长方块的形状

5.横切姜片,这样姜片可以切得很薄(右手握刀,左手食指和中指需要压住刀侧面的上方以及姜片右边,其余左手的三个手指都要高于左手的食指和中指,这样不会横切到手。如果不习惯,可以按平时方式切)

6.切下一片薄的姜片,这样之后切丝也会很细

7.姜片全部横切成薄片,并在砧板上半重叠摆放

8.把摆放好的姜片快速切丝,快速切会比较均匀(不习惯的话,也可以按自己日常方式切,尽量细就好)

9.热锅注油,把姜丝放入锅中,爆香(姜丝细,姜更香,之后姜味更容易入味)

10.锅中放入八角和少许花椒,翻炒
