小窍门&温馨提示
1. 我做菜放肉的话,喜欢把肉煸到几乎无油变硬的状态,我们家人都比较喜欢这种口感的肉;
2. 茄子、豆角和青椒,都是用手掰开的,这样的比用刀切的口感更好;
3. 宽粉事先泡过的话更加容易熟;
4. 南瓜选用长条状的大南瓜,口感绵绵的,而且汤也会比较粘稠,很喜欢;我试过用那种小金瓜,做出来的口感不够面,个人不太喜欢那种口感的;
5. 做这道菜,盐量一定要加够,太过清淡的话会味道不足,吃上去不够香;
6. 配菜不是必须是这些,增减都没问题,例如可以只用茄子、土豆、青椒和西红柿来做,味道也很好的~
