1.个人制作两个的量,首先鸡蛋最好是使用冷藏过的。以保证蛋白打发状态会比较好,鸡蛋蛋清蛋黄分离在无水无油的盆中

2.首先制作蛋黄糊,蛋黄加入细砂糖搅打几下均匀

3.加入玉米油搅拌搅打至蛋黄乳化

4.倒入牛奶搅拌均匀使其成为淡黄色

5.再筛入低粉搅拌混合均匀,搅拌的时候要注意不要打圈以免面粉起筋。搅拌好放置一边待用

6.蛋白加入几滴的柠檬汁去除蛋白特有的腥味,打蛋器高速打几下加入三分一的细砂糖。继续打发至细滑状态再加入三分一的细砂糖继续打发

7.待起纹路有小阻力感加入剩下的三分一,继续打发至硬性发泡。即拿起来有个尖角即可

8.勺三分一的蛋白加入蛋黄糊里,翻拌均匀

9.再倒回蛋白里面充分的翻拌搅拌混合均匀,翻拌的时候要注意一样不能打圈。以免蛋白消泡

10.拌好后倒入模具,拿起放下轻震几下。消除蛋糕里的一些气泡

11.烤箱提前预热150度, 上下火中底层烤制55分钟【温度与时间请根据自己烤箱特性做出适当的调整】

12.蛋糕出炉后倒扣完全冷却才进行脱模处理

13.把蛋糕放盘子上淋点酸奶。
