1.宰杀清洗的鱼鳅,泡姜、泡海椒(红三分二、青三分一)切粒,蒜苔切段。

2.多油,五六热下鱼鳅炸至冒小油泡泡捞出;

3.再在八九成热油中二次复炸,表面起酥壳后捞出。

4.锅留底油,下豆瓣酱炒香,倒入泡姜粒、泡海椒粒、蒜苔翻炒;
