生抽适量,
盐适量,
糖适量,

料酒适量肉末芹菜的做法步骤

1.先将肉末用生抽2小匙、胡椒粉1/4小匙、糖1/4小匙、料酒1小匙抓腌均匀,辣椒切成小片、芹菜切丁;

2.开锅放肉末,在锅里平均的摊开;

3.将肉末煸到比较干,盛起;

4.另起锅,中火,放油,放盐1/2小匙,才把辣椒片倒入锅,据说这样做可减少辣椒的辣味;

5.倒入芹菜粒,快速兜几下,加生抽1小匙和糖1/4小匙,翻炒;

6.倒入肉末,撒少许胡椒粉和料酒或白兰地1小匙,兜几下可上碟。

一、肉要预先腌过;
二、临出锅前放些料酒或白兰地,菜会更香。
