1.全部用料

2.杏仁粉和糖粉放入料理机稍稍研磨一下

3.过筛,我过了两次

4.蛋白和细砂糖隔水加热到微热烫手,边加热边搅拌,砂糖融化后取出

5.用打蛋器打几下,放入少量蛋白粉1g左右吧,没有不放也可以

6.只做了一种颜色,所以在打蛋白的过程中我就滴入了色素,第一次使用色素,本来想调成蓝色,谁知道成了这个鬼颜色,也不敢多放。

7.打至如图状态即可,提起打蛋器有小尖角出现

8.取1/2的蛋白到粉类混合物中,切拌,让蛋白霜包裹杏仁糖粉

9.加入剩余的蛋白,翻拌均匀,拌好的面糊从刮刀滴落时呈粘稠的带状

10.拌好的面糊装入裱花袋

11.挤到马卡龙垫子上,另外剩余的我挤到了油纸上

12.风干的方法有很多种,大家百度吧,我用的烤箱上下火30度,打开烤箱门,30分钟左右。晾好的马卡龙表面不粘手还不行,一定要有一个壳

13.烤箱上下火160度预热,放入预热好的烤箱中层,下层放一个烤盘隔热。出现裙边后,转110度上下火,8分钟左右即可。为了防止上色过深,可以盖锡纸,我忘记了。

14.烤好的马卡龙凉后用刮刀取下即可

15.挤上我最爱的巧克力
