1.蛋白和蛋黄分离,装蛋白的盆要无水无油

6.用不规则手法搅拌成细腻光滑的面糊

7.蛋白中加入几滴白醋,分3次加糖,打发至干性发泡状态。

8.先取1/3的蛋白霜倒到蛋黄糊中,翻拌均匀
