1.五花肉洗净入凉水锅中,煮沸,撇去表层污物,加适量花椒,中小火煮

2.至五花肉8分熟(筷子可插入,但不是特别容易)时捞出,擦干表面水分

3.五花肉切大点的片,不用很薄,否则炒制时五花肉会干硬

4.青蒜切段,蒜白蒜青分开,尖椒切块

5.锅中加少量油(煸炒五花肉时还会出很多油)烧热,下姜片和五花肉同炒,小火煸炒出五花肉中的油脂(煸炒时间不用太长,防止肉片变硬);

6.加入1大匙郫县豆瓣酱
