1.豆腐最好选择介于南北豆腐之间的既不那么嫩,也不那么的硬,软硬适中,豆豉、豆瓣酱(剁碎)

2.辣椒油、姜蒜末、牛肉馅(用料酒稍微腌一下)

3.豆腐切去边后,切2厘米见方的小块,放入加入盐的热水中(为了使豆腐不易碎)

4.锅内放辣椒油,然后放入牛肉馅,煸炒至牛肉馅香酥

5.然后放入豆瓣酱两匙,炒出红油,放入姜蒜末和豆豉

6.炒香后沿锅边放入少许料酒,放入鸡精

8.中火开盖炖10分钟后,分两次放入水淀粉,稍微勾下芡,然后淋入花椒油即可出锅
