1.酸菜鱼、酸汤鱼、水煮鱼要挑大一点的草鱼。

2.刮鳞,骨肉分离(在鱼摊叫卖家开的鱼肚)。

3.三斤多的草鱼,三个人的量,鱼取一半即可。

4.鱼肉切薄片。

5.放入酱油、蚝油、料酒、半个鸡蛋、生粉腌制一会。

6.鱼头、鱼肉都需要腌制。

7.配菜洗干净备用。

8.热油先煎一下鱼头、鱼骨。

9.加两大碗水,3大勺酸汤。

10.煮沸腾。

11.加入配菜。

12.煮沸腾后加入适量食盐、酱油、蚝油调味,加入葱和香菜。

13.盛入汤盘中。

14.热油煮鱼片,油需要多一点(正宗做法是鱼肉过宽油)

15.鱼片油爆30秒。(刚好熟即可,过了鱼肉易老易碎)

16.鱼片煮熟铺上面。

17.爆香辣椒、蒜末、花椒。
