1.河蟹洗刷干净,用线绳绑好。(绑线绳是为了烹制时不掉蟹爪)

2.葱切段,姜切片备用。

3.锅内放油,用量比炒菜时略多一些,烧至六成热。

4.放入葱姜和花椒粒小火爆香。

5.将河蟹壳朝下放入锅中。(蟹壳朝下可以保证蟹壳颜色红亮)

6.加入一勺糖。

7.加入生抽。

8.加入没过蟹壳的热水,大火烧开。

9.调小火,盖上锅盖,焖15分钟左右。(时间视河蟹大小增减)

10.大火收汤约五分钟左右,即可出锅。
