1.普通面粉和全麦粉混合均匀,加入酵母,慢慢加水活成软硬适中的面团(每500克面粉,加入酵母约4--5克,水约250---270克,适当调整)。发酵至充满蜂窝即可。

2.肉糜放入大碗中,加入料酒,十三香和少许盐,搅拌均匀,肉馅发粘有弹性。

3.加入大葱葱花,搅拌均匀。

4.白萝卜洗净,切碎,加盐腌制10分钟。

5.将腌制好的白萝卜碎挤干水分,加入到肉馅中。

6.加入适量蚝油和酱油,搅拌均匀。(肉和白萝卜3:2比较好,因为加盐后萝卜还会出水,萝卜太多肉馅会太软不好包,做好后肉馅会比较散)。

7.将发酵好的面团揉匀,排出气泡。切开看,没有大气孔。

8.取适量面团,搓长,切剂子,按扁,擀成中间厚边缘薄的面片。

9.包入适量肉馅。

10.包成包子。

11.炒锅烧热,倒入适量油,间隔开放入包子生坯。

12.煎至底部金黄。

13.倒入适量开水,水量没过约包子的三分之一。

14.盖盖,焖至水分蒸发干即可。

15.出锅,撒少许黑芝麻。
小窍门&温馨提示
用煎包子的时候,火力不要太大,我用燃气灶外圈最小火。
