1.食材备好。

2.300克面粉中加入10克的植物油。

5.加入适量温水和成一个偏软的面团,饧20分钟再把它揉光。

6.再次揉光分成5份抹上食用油。

7.再次密封饧发2小时。

8.肉剁成肉馅加入少许料酒,生抽,蚝油,白糖,盐,胡椒粉姜末,花椒粉还有适量清水搅匀,加点水口感更嫩一点。

9.香葱切碎,20克面粉+少许花椒粉+少许盐加入一大勺热油调成稀油酥。

10.案板刷点油放上面剂先用手拍成薄片,再用擀面棍擀薄。

14.左右十字交叉将肉馅和葱花包住。

15.边向后拉伸边向前卷起 剩余一节切成面条卷起。

16.卷好的饼不用饧发直接上锅煎。

17.平底锅倒油烧至微热放入饼胚开小火煎。

18.底部定型后翻面煎另一面,全程一定都是慢火才行。

19.煎制大约5分钟煎制两面金黄酥脆即可出锅。

小窍门&温馨提示
这个饼用的油比较多,说是煎熟的其实是炸熟的,全程必须是最小火才行,不然外面熟啦里面还是生的就不好了。
