1.猪皮去毛后冷水下锅,加葱姜料酒焯水,开锅后半分钟即捞出。

2.用刀刮干净正反面的油脂,若焯水过久则去油脂时容易刮坏猪皮。

3.切成丝。

4.温水+盐+白醋抓洗,然后清水投洗四次以上,投至水特别清澈。

5.冷水焯水除异味,加葱姜料酒,开锅后一分钟捞出。

6.按一斤肉皮放三到四斤水的比例,放压力锅加适量盐煮四五十分钟。

7.倒入盆里放冰箱冷藏至凝固。
